30min · 3 servings Ingredients: • 2 medium eggplants (sliced into 1/2 inch thick rounds and scored). • 1.5 tbsp chilli flakes • 1.5 tbsp paprika • 1.5 tbsp garlic powder • 1 tsp seasoned salt • 1/4 cup olive oil • Pomegranate seeds. • Fresh parsley to taste. Miso Tahini Sauce: • 3 tbsp tahini • 1/2 lemon juice • 2 garlic gloves • water to get to desired consistency (2-3 tbsp). Directions: • 1.- mix paprika, chilli flakes, garlic powder, seasoned salt & olive oil and brush it on the eggplant slices. • 2.- preheat oven for 170°C. Bake for about 20-30mins. • 3.- mix everything for the sauce. • 4.- add the sauce on top of the eggplant, top it with herbs, pom seeds, black pepper and more salt if needed.
