INGREDIENTS: 3 ripe tomatoes, halved 5 large eggs 1 tablespoon extra-virgin olive oil 1 garlic clove, minced 1/2 teaspoon dried oregano Kosher salt, to taste Freshly ground black pepper, to taste Fresh parsley, for garnish RECIPE: 1. Heat the olive oil in a pan over medium heat. Add the tomatoes, cut side down, cover, and cook for 10 minutes, until soft. Add a splash of water if the tomatoes aren’t juicy. 2. Remove the tomato skins, then mash the softened tomatoes with a spoon. Stir in garlic, oregano, salt, and pepper. 3. Crack the eggs over the tomato sauce, season lightly with salt, cover, and cook until the eggs are set, 8–10 minutes. 4. Finish with freshly ground black pepper and chopped parsley. They are what my grandfather made me when I was a kid. We call them dippy eggs but they are what I love to eat. First things first, I get my pan going over high heat. We're letting the pan get hot. I then crack my egg in a container so I could go straight into the pan with it. If I was doing multiple eggs, I would put multiple eggs in here. Once the pan gets hot, I put a copious amount of olive oil in here. Remember, these are fried eggs. When I look at the oil across, I see a little shimmer in the oil. That's what's telling me that oil is getting very very hot. Here we go. And we're just going to let that egg start to fry. Little bit of salt. Put pepper on here now if you'd like to and we're just going to keep an eye on it. These edges are going to start to get kind of a nice golden brown and then I'm going to base the interior of the egg just a touch so those whites finish cooking. Now, we're going to hit it with the base. It's just going to firm up those whites on the top Put it right on your toast. Chili flakes on top. I like to hit mine with a little bit more salt. And then you could give it a little drizzle of olive oil if you'd like. And this is what we should be look. Oh little bit of that dippy runny yolk. See that? That's the egg I grew up with. Crispy on the bottom. Yoki in the center. So good. You can garnish this with avocado. You can garnish this with tomatoes, salsa, herbs. Get crazy. Make it your own crispy egg but learn to love the technique. Dippy eggs.

We're just popping it open and we're just going to spread this out into the bottom of our loaf pan. I got my new La Crusé loaf pan here and this is my first time using it. I'm so excited. I've got six slices of provolone cheese here. This is going to be a nice base layer that's going to stick our ingredients to that pizza dough. Just place that cheese directly on top like that. Got about half a cup of diced ham. I'm just going to pour that directly on top. Give that a quick spread just like that. I've got some crispy bacon here. I only need about four slices. We're just going to place them right on top like that. You can break em up if you want. Now, we're going to grab our eggs. I've got four eggs here. That's all we need for this recipe. We're going to season with some salt, some pepper, we're going to add some heavy whipping cream just a little bit and we only need four eggs for this recipe because we don't want to overpower this casserole. Now, we're going to whisk up these eggs. Just get everything mixed up. Quick and easy. There we Alright, we're going to slide our loaf pan back over and we're just going to pour these eggs right on top of everything. They're going to drip down and mix with that ham and the bacon and that delicious cheese. Now, I've got a few tablespoons of chopped onions on here. I'm just going to put this on half because I'm not big on onions but my wife loves onions. We're going to add a bunch of shredded cheese here. I've got about a cup right there on top. Now, I'm going to add some of these brown and serve pre-cooked sausage links. We need about eight here. We're we go 12345678 you know what we'll do nine and you guys always say I don't add enough veggies so we're going to add some baby spinach and this has been washed we're just going to go on top here and this spinach is going to shrink down so you can kind of put a bunch in here overflowing with spinach now we're going to push this down into our loaf pan as we fold this over we're going to make a nice delicious breakfast casserole loaf we're just going to tuck this thing in like it's going to bed right here get all those edges want to kind of seal this edges over here we want to make sure none of good stuff escapes and I'm going to give it a nice pat down make it nice and even now we have some melted butter I melted about half a stick here and we're just going to brush this over the top this is going to form a nice golden layer on the top of our breakfast casserole loaf then we're going to hit it with some Italian seasoning little bit extra flavor there we go our oven is preheated to 350 degrees we're going to throw this in until that crust is golden brown and everything is cooked through alright we cook this for about 35 minutes and our loaf is nice and crispy. Listen to that you guys. Now, we have to flip this upside down and get this out of our loaf pan. Oh, there we go. This thing is cooked perfectly. Let's go ahead and cut into it. Oh, goodness you guys. I cannot wait to show you this reveal. Look at that. Go ahead and grab a slice. Put it on our plate here. We're going to add some of my favorite hot sauce. You can add salsa, ketchup, whatever you like. That, alright? Let's try a bite. That is so good.
