417K views · 11K reactions | Mapo Tofu Ingredients * 3 tbsp neutral oil * 1/2 lbs ground beef/pork * 1 inch knob ginger(minced) * 4 cloves garlic(minced) * 2 scallions(white portion sliced; save green portion for garnish) * 2 tbsp doubanjiang * 2 tsp Sichuan Chili flakes * 1-2 tsp Sichuan peppercorn powder * 2 tbsp shoaxing wine * 1 tsp soy sauce * 2 tsp sugar * 1/2 tsp white pepper * 2/3 cup chicken/beef stock * 1 lbs soft/silken tofu * 2 tsp cornstarch+3 tbsp water * 1 tsp sesame oil Instructions 1. Mince ginger and garlic and slice white portion of scallions. Make sure to slice and save green portion of scallions for garnish. 2. Drain and cut tofu into cubes. Simmer tofu in salted water for 2-3 minutes to firm up and set aside for later. 3. Heat oil in a deep pan on medium heat and sauté ground meat for 6-7 minutes. Cook until water evaporates and the fat starts to render and brown the mince. 4. Add the white portion of scallions, ginger, garlic, doubanjiang, Sichuan chili flakes, and Sichuan peppercorn powder. Sauté for 3-4 minutes until fragrant. 5. Deglaze with shaoxing wine and simmer for 2-3 minutes before seasoning with soy sauce, sugar, and white pepper. 6. Pour in stock, add tofu, and bring to a simmer. 7. Pour cornstarch slurry and gently mix until thickened. 8. 180K views · 21K reactions | Scallion Oil Noodles Ingredients * 8-10 scallions * 2 shallots(optional) * 1/2 cup neutral oil * 2 tbsp light soy sauce * 3 tbsp dark soy sauce * 1 tbsp oyster sauce * 4 tsp sugar * 1 lbs fresh wheat noodles * Egg(optional) Instructions 1. Cut scallions into 2 to 3 inch segments separating the white and the green. Thinly julienne each and set aside. Thinly slice shallots as well. 2. Add shallots and white portion of scallions in a wok with oil. Cook on medium heat for 8-10 minutes before adding the scallion greens. 3. Cook for an additional 5-7 minutes until golden brown then strain out the oil. 4. To a wok, add 3tbsp of the scallion oil, light soy sauce, dark soy sauce, oyster sauce, and sugar. Let simmer on low for 2 minutes. 5. Boil fresh wheat noodles according to instructions and combine the noodles with the sauce. 6. This is a... | By Chris Cho | Yo this is how you make soy marinated egg. Ooh. One cup of soy sauce. One cup of water a dashy stock, and a half a cup of sugar. That's it. And now we're going to chop up our vegetables. Two scallions. Half a onion. And two jalapenos for that extra kick. Take the seed out. Be careful when you cut jalapeno either wash your hand or put a glove on because if you rub your eyes or you go to the bathroom, that's all going to make you say. Alright, throw in your chopped up scallions, chopped up onions, jalapeno for that extra kick. Tablespoon of garlic, and a tablespoon of sesame seed. Like that. Are we going to mix that join up? We're going to boil some water. Throw in our eggs. Boom. Just like that. Add a teaspoon of salt. Six to 7 minutes. If you like a little bit more yolky, keep it around six. I like to keep it at seven to eight. To be honest, I don't like my eggs runny. Personally, I just don't. You know, you like yourself runny? Nah, yeah, I actually do. Yeah, so it's all preference. I just about six to 7 minutes. Now we going to peel the eggs. Alright now we going to throw that into a ice bath. Throw the eggs right in. Look at that. Mm. It's just egg with some soy sauce on it. It's just dripping out you know. But give it about an hour or two. And then your eggs going to turn just lightly brown and it's going to be perfect. Alright? So this is before. This is after. As you can see like this side was marinated. This side has it. You know what I mean? So that's the difference. You don't want to add your sesame oil inside this because now it's going to float around all oily right? You want to just marinate your egg in the sauce. And then when you eat that's when you splash a little bit of sesame oil on top. Alright? Just watch. Let's go. Alright so we going to move that oh egg right on top of the oil. I mean that rice. Watch this. Cut that right in half. Look at that. Imma throw some of that sauce right on top. And then just a splash of sesame oil. Whoo. Alright, moment of truth. And you can mix that sauce right into the rice too just like that. So keep this in the fridge. And you have plenty of ponchant to eat for days to come. Preheat oven to 425. 2. Place salmon on parchment lined baking sheet. Using the back of a spoon, spread 1 tbsp Dijon mustard on each salmon filet. 3. To a small bowl, mix sugar, paprika and thyme. Using a clean spoon, sprinkle over the mustard until coated. 4. Cook the salmon for 12-15 minutes or until you reach your desired doneness. 5.
