What ya need: 3 cups cooked quinoa 1 cup steamed peas 1 cup sautéed asparagus 1 cup sautéed zucchini 1/2 cup vegan feta 1 can rinsed and drained chickpeas 1/4 cup fresh dill Dressing: 1/4 cup olive oil 3 tbsp lemon juice 1 tbsp white wine vinegar 1 tsp dijon mustard 1/2 tsp salt Pepper and garlic to taste Whisk together dressing until combined and then pour over your salad ingredients! *saute the zucchini and asparagus in olive oil together, steam peas in the microwave
