Rinse quinoa. Boil water, add quinoa, simmer for 15 mins until fluffy. 2. Heat olive oil in a pan. Sauté onion & garlic until soft. 3. Add bell pepper, zucchini, and broccoli; cook for 5-7 mins. 4. Mix in cooked quinoa, soy sauce, salt, and pepper. 5. Stir well; cook for 2 mins. 6. Serve warm with a splash of lemon juice. This dish is packed with protein, fiber, and vitamins for a healthy boost!
