Chicken & Andouille Gumbo - this was super yummy! I could not find Andouille sausage at Walmart, so I used regular beef smoked sausage, and I used about 5 chicken thighs. I served this over Jasmine rice and with homemade French bread. I will be checking other stores to see if I can find the Andouille sausage for the next time I make this ;)

Black Bean, Chorizo & Sweet Potato Chili Absolutely Delicious! Made a few changes though. I use Italian sausage and if you do not like a lot of heat use sweet sausage and cut back on the hot peppers used to adjust to your taste. This was a hit with kids and adults that do not even like sweet potatoes!
