Mini German Pancakes - Chris O's 6 eggs; 1 c. milk (skim or low fat ); 1 c. flour; ¼ tsp salt Toppings: Powdered sugar+lemon juice, or maple syrup Preheat oven to. Non-stick spray cupcake pans. Mix eggs, milk, flour+salt to blend. (Do not over mix. Batter will be lumpy.) Pour batter in cupcake pans. Makes approx. 12-16 mini German pancakes. Bake 425º F 18-25 min. Let cool for 1 -2 min. Remove mini pancakes from pan. Drizzle with lemon juice (or maple syrup)+sprinkle with powdered sugar.
