Cheesy taco pie casserole.....spread Fritos or Santitas corn chips on the bottom of a 9"x 13" casserole dish. Brown one large onion with 2-3 lbs of hamburger. Drain. Stir in one can diced petite tomatoes, one can whole kernal corn, one can Rotel, 16 oz carton of sour cream, two packages taco seasoning, one cup of water, and one lb cubed Velveta. Stir together until creamy. Pour on top of chips. Sprinkle two cups shredded cheddar cheese over meat mixture. Bake in oven that has been preheated at 350° until cheese is melted. Garnish with black olives, sour cream, or more chips. Enjoy!
