Preheat the oven to 390F 2. Thinly slice the potatoes by using a mandoline slicer. 3. In a 12 inch cast iron pan, add the butter and shallots and fry on low heat for 5 minutes until the shallots have caramelized and squish the roasted garlic head. 4. Mix caramelized onion and garlic with grated cheese, heavy cream, salt and pepper. Separate 1/4 of this mixture and set aside( for top) 5. Mix sliced potatoes with cheese mixture. 6.
