By @livthepositivefoodie Ingredients for 1: 80g dry weight linguine 30g reduced fat halloumi 1/2 onion 2tsp garlic 120ml veg stock 2tsp tomato purée 50g reduced fat soft cheese 1tsp paprika, Italian herbs and 1/2 tsp chilli flakes Method: Fry off garlic and onion until fragrant, add in halloumi. Start cooking the linguine. Season the halloumi and onion with the paprika, Italian herbs, chilli flakes, salt and pepper. Once halloumi is browned, add in the veg stock, the soft cheese and tomato purée and keep on a low to medium heat till a sauce begins to form. Add in pasta and give it all a stir. Simmer for a few minutes until the pasta soaks up the sauce and serve. Pour any left over sauce over the top! 559 calories 25g protein 17g fat 74g carbs
