As someone who suffers from IBS and an autoimmune disease, it's very important that I consider carefully what to put in my body. These are some tasty recipes that energize me, often flatten my tummy, and most importantly, keep me healthy! The following recipes avoid gluten and eggs and try to contain as many veggies as possible.

3-Ingredient Banana Quinoa Muffins {vegan, oil-fee, GF} | power hungry
These were so tasty! I love how versatile they are too--definitely will be experimenting with new batches!
Quinoa Taco Salad [vegan, gf]
Pretty good stuff! Make sure the quinoa has cooled so the crushed tortilla chips stay crunchy. I'd also suggest adding some seasoning--this only calls for salt and pepper, and some cumin could probably work great.
Vegan Loaded Sweet Potato
Super tasty healthy alternative to the traditional baked potato. I skipped the sauce and it was still great!
