ntroducing Spanakorizo, a Greek classic! Made with fresh spinach, aromatic herbs, and rice, this dish is juicy, fresh, and incredibly simple to make.... | By Dimitra's Dishes | Is a classic Greek recipe made with lots of spinach, rice, and herbs. It's traditionally served with feta, olives, and sometimes yogurt but it goes great with fish, shrimp, or in a bowl topped with some kiftas or beef tequila. Let's get started. It's so easy to make. So, finally chop a red onion and cook it in some olive oil until it's soft and translucent. You don't want any color on it. Then, I have six garlic cloves. I'm just going to slice those up and add them to the onion and we're going to cook those again another four, five minutes or until they're nice and soft and gold next the spinach goes in we're using lots of spinach 2 pounds today and that's going to go in and I'm going to increase the heat to like a medium high until the spinach is wilted I also like to season each batch with salt and freshly cracked black pepper we're going to add the rice at this time our borio rice is my favorite for this season with a little bit of salt and pepper some water bring it to a boil once it comes to a boil reduce the heat to a simmer put the lid on the pot and let it cook for about 15, 20 minutes, then I like to add my fresh dill in, some lemon juice, a little bit more olive oil, and a little pinch of dried mint for depth of flavor.
