Thai Pumpkin Soup! The flavors of a spicy Thai red curry but in creamy, velvety pumpkin soup form.
This is one of my favorite-ever soups, and now is the perfect time to make it! RECIPE NOTES / TIPS ▪️Lemongrass and Thai basil are sold at many Asian grocery stores and sometimes at some well-stocked grocery stores. Makrut lime leaves are sold at Southeast Asian and some pan-Asian grocery stores; or you can order dried makrut leaves online. If you can’t find every ingredient for this recipe, don’t worry—it’ll still be tasty! ▪️My favorite vegan red curry paste is from the brand Maesri (it is spicier than most!). ▪️Feel free to use any winter squash or pumpkin, though I find kabocha squash, red kuri squash, or butternut squash have better flavor (and texture) than standard pie pumpkins. full recipe on @rainbowplantlife page

VEGAN MOZZARELLA 🌱
7hr · 5 servings Recipe: • RECIPE (3 balls) • -1 cup (130g) cashews • Boil in water for 15 minutes. • -1 1/4 cup (310g) vegan yogurt • -1/4 cup (60ml) non dairy milk • -juice of 1/2 lemon • -1 Tbsp nutritional yeast • -1 Tsp salt • -2 Tbsp olive oil • -6 Tbsp corn starch • Blend everything and heat it up until thickened whilst stirring constantly. • Prepare an ice bath with ice cubes, water and salt. • Scoop in the mozzarella and refrigerate for 3h • Take out of the water and refrigerate 2-3 more hours.

One of a Kind Healthy Noodle Recipe That You Can Try All Year Round!
Indulge in a savory noodle sensation with this simple yet flavorful recipe. Mix together in a small bowl: 1/2 tbsp soy sauce, 1 tbsp vegetarian oyster sauce, 1/2 tsp maple syrup (or sugar), 1 tsp dark soy sauce, 1 tsp cornstarch, and 1/3 cup cold water. In a skillet, heat 1/2 tbsp olive oil. Fry 1/4 block (about 87.5g) extra firm tofu until golden. Add 2 minced garlic cloves and the white parts of 2 finely sliced green onions; fry for 2 minutes. Pour in the sauce, simmer for 2-3 minutes until thickened. Serve over 250g cooked udon, top with 1 tsp sesame oil and green onion greens. Enjoy!
