Slice the potato lengthwise, following the instructions in the video or as desired. Skewer the potato horizontally and cut vertical lines. Flip and cut diagonal lines. Soak accordion potatoes in water with salt and baking soda for 5-10 minutes. Dry them afterward. Cooking: Heat oil in a pan at medium heat. Fry accordion potatoes until crispy and golden brown.
