Mix together in a small bowl: 1/2 tbsp soy sauce,
1 tbsp vegetarian oyster sauce,
1/2 tsp maple syrup (or sugar),
1 tsp dark soy sauce,
1 tsp cornstarch, and 1/3 cup cold water.
In a skillet, heat 1/2 tbsp olive oil.
Fry 1/4 block (about 87.5g) extra firm tofu until golden.
Add 2 minced garlic cloves and the white parts of 2 finely sliced green onions;
fry for 2 minutes. Pour in the sauce, simmer for 2-3 minutes until thickened. Serve over 250g cooked udon, top with 1 tsp sesame oil and green onion greens. Enjoy!
