This Italian Chopped Salad rivals any restaurant Italian salad there is. It's one of my favorite chopped salad recipes because it's loaded with a variety of healthy ingredients tossed in a delicious homemade Italian dressing that will have you coming back for seconds!

Produce

• 1 tsp Basil, dried

• 1 Cucumber, large

• 1 Dired oregano

• 1 1/2 cups Garbanzo beans, canned

• 2 Garlic cloves

• 1/2 Lemon, Juice of

• 1 1/2 tbsp Oregano, dried

• 5 Peperoncini

• 2 cups Radicchio

• 4 cups Romaine lettuce

• 1 pint Sweet cherry tomatoes, small

Condiments

• 1/2 cup Italian vinaigrette

• 2/3 cup Kalamata olive

• 1 tbsp Lemon juice, fresh

Baking & Spices

• 1/4 tsp Black pepper, freshly ground

Oils & Vinegars

• 1 1/2 cups Olive oil, good extra-virgin

• 2 1/2 tbsp Red wine vinegar

Dairy

• 1/3 cup Parmesan cheese, grated

• 2 tbsp Parmesan cheese

Other

• Half of a small red onion, halved through the core
